Bolognese Sauce

This simple, meatless spaghetti sauce has all the full Italian
flavour, with the added goodness of soy. Make a double recipe, and
keep a batch in the freezer. The sauce is also ideal for lasagne. |
Ingredients

Instructions
- Crumble the ground beef alternative in medium bowl with fork. Set
aside.
- In saucepan, sauté onion in oil over medium heat 5 minutes
or until onion is soft.
Add garlic and sauté for 1 minute.
- Add stock, bay leaves, sugar,basil, oregano, salt,black pepper and
cook approximately 4 minutes, to reduce liquid by half.
- Add tomatoes, tomato paste and stir well. Bring to boil, reduce heat
to simmer and cook for 10 to 25 minutes.
- Stir in ground beef alternative and heat through.
- Adjust seasoning to taste and serve over spaghetti noodles.
Makes 4 servings.
