Bolognese Sauce

Bolognese Sauce

This simple, meatless spaghetti sauce has all the full Italian flavour, with the added goodness of soy. Make a double recipe, and keep a batch in the freezer. The sauce is also ideal for lasagne.


Ingredients

500 mL ground beef style meat alternative 2 cups
1/2 medium onion, diced 1/2
15 mL olive oil 1 tbsp
2 cloves garlic, minced 2
125 mL vegetable stock 1/2 cup
2 bay leaves 2
15 mL brown sugar 1 tbsp
5 mL basil 1 tsp
2 mL oregano 1/2 tsp
2 mL salt 1/2 tsp
1 mL black pepper 1/4 tsp
796 mL canned tomatoes, puréed 28 oz
75 mL tomato paste 1/3 cup

 

Instructions

  1. Crumble the ground beef alternative in medium bowl with fork. Set aside.
  2. In saucepan, sauté onion in oil over medium heat 5 minutes or until onion is soft.
    Add garlic and sauté for 1 minute.
  3. Add stock, bay leaves, sugar,basil, oregano, salt,black pepper and cook approximately 4 minutes, to reduce liquid by half.
  4. Add tomatoes, tomato paste and stir well. Bring to boil, reduce heat to simmer and cook for 10 to 25 minutes.
  5. Stir in ground beef alternative and heat through.
  6. Adjust seasoning to taste and serve over spaghetti noodles.

Makes 4 servings.
