Tofu-Frosted Chocolate Cake

A moist dessert with delicious creamy frosting.

 

Ingredients

  • 1 pkg (one-layer size) chocolate cake mix or brownie mix (260 g)
  • 1 pkg (300 g) silken tofu
  • 3 tbsp (45 ml) sugar
  • 3 tbsp (45 ml) cocoa
  • 1 tsp (5 ml) margarine

 

Instructions

Prepare cake mix according to package directions, substituting 1/3 cup tofu for one egg.
Pour batter into 8” square pan and bake 25 – 30 minutes at 350°F or as directed on package.

To prepare frosting: Blend remaining tofu (approximately 1 cup) with sugar, cocoa, and margarine until smooth.
Spread cooled cake with frosting. Store uneaten portions in refrigerator.
