Easy Tofu Stir-Fry

Easy Tofu Stir-Fry

The tofu in this stir-fry recipe takes on the flavours of the garlic, oyster sauce and soy sauce to give this dish its authentic Asian taste. Serve with steamed rice or pasta.

Ingredients

350 g firm or extra firm tofu, cubed 12 oz.
5mL salt 1 tsp
1 garlic clove, minced 1
30 mL soy oil 2 tbsp
1 mL black pepper 1/4 tsp
500 mL assorted fresh vegetables (red pepper, baby corn, snap peas, carrots) 2 cups
250 mL mushrooms, sliced 1 cup
75 mL green onion, chopped 1/3 cup

Thickener

30 mL cornstarch dissolved in 1/4 cup (50 mL) water 2 tbsp

Sauce

375 mL water 1/2 cups
5 mL oyster sauce 1 tsp
5 mL soy sauce 1 tsp
5 mL cooking wine 1 tsp
5 mL sesame oil 1 tsp
5 mL sugar 1 tsp

Instructions

  1. Sprinkle salt over tofu cubes and mix well.
  2. Sauté garlic and tofu in oil until sides of tofu become slightly brown.
  3. Combine sauce ingredients. Set aside.
  4. Add mushrooms, assorted vegetables and sauce mixture to tofu. Stir, cover and cook until boiling. Lower to medium heat and cook for 2 more minutes.
  5. Add black pepper, green onions and thickener. Stir well and cook until sauce is thickened.
  6. Serve over pasta or rice.

Makes 6 servings.

For a quicker stir-fry, sauté fresh vegetables and firm tofu until veggies are tender crisp and tofu is lightly browned. Add a jar of ready-made stir-fry sauce, heat through, and serve with rice.
