Maple Syrup Corn Bread

Ingredients

275 mL corn meal 1 cup + 2 tbsp
125 mL whole wheat flour 1/2 cup
15 mL baking powder 1 tbsp
150 mL soy flour 1/2 cup + 2 tbsp
45 mL soy oil margarine 3 tbsp
75 mL maple syrup 1/3 cup
1 egg, well beaten 1
250 mL milk 1 cup

 

Instructions

Combine corn meal, flours, baking powder and salt. Melt margarine and combine with maple syrup, egg and milk. Combine with flour mixture. Pour into oiled 8" x 8" pan. Bake at 425°F (220°C) for 20 minutes.
