Peachy Tofu Pudding


Peachy Tofu Pudding

It takes just minutes to whip up this easy dessert that's not only a sweet reward for cleaning your plate, but also a delicious way to enjoy all the healthful benefits of soy.


Ingredients

  • 1 pkg (10.5 oz/300 g) silken tofu
  • 1 can(s) (14 oz/398 ml) sliced peaches, including liquid –reserve 6 slices for garnish
  • 2 tbsp (30 ml) sugar
  • 1 pkg (4 serving size) instant vanilla pudding powder
  • 2 cup(s) (500 ml) whipped topping

 

Instructions

In food processor, blend tofu, peaches, sugar, and pudding powder until fairly smooth.
Fold in whipped topping.
Spoon into dessert dishes and garnish with additional whipped topping and peach slice.

Variation: Use 2 cups sweetened frozen strawberries, thawed, instead of peaches.
