Tofu Quiche

Serve this soy-satisfying quiche for brunch or dinner
with a tossed green salad. To save time, use a ready-made pie shell. |
Ingredients

medium or firm tofu |

soy cheddar, grated |

mushrooms, sliced |

green or red peppers, diced |
1/2 cup |

celery, chopped |

onion, chopped |

fresh parsley, chopped |
1/2 cup |
| 10 mL |

Instructions
- Preheat oven to 350° F (175° C).
- Wrap tofu in a muslin cloth or paper towel and squeeze dry.
- Sauté all vegetables.
- In a separate bowl, beat eggs together with tofu. Stir in remaining
ingredients and pour into pie shell. Sprinkle grated cheese on top.
- Bake 40-45 minutes or until golden brown. Let stand 10 minutes before
serving.
