Tofu Quiche

Tofu Quiche

Serve this soy-satisfying quiche for brunch or dinner with a tossed green salad. To save time, use a ready-made pie shell.

Ingredients

454 g medium or firm tofu 16 oz
1 9-inch pie shell 1
250 mL soy cheddar, grated 1 cup
2 eggs 2
250 mL mushrooms, sliced 1 cup
125 mL green or red peppers, diced 1/2 cup
125 mL celery, chopped 1/2 cup
125 mL onion, chopped 1/2 cup
125 mL fresh parsley, chopped 1/2 cup
10 mL salt 2 tsp
30 mL flour 2 tbsp

Instructions

  1. Preheat oven to 350° F (175° C).
  2. Wrap tofu in a muslin cloth or paper towel and squeeze dry.
  3. Sauté all vegetables.
  4. In a separate bowl, beat eggs together with tofu. Stir in remaining ingredients and pour into pie shell. Sprinkle grated cheese on top.
  5. Bake 40-45 minutes or until golden brown. Let stand 10 minutes before serving.

Makes 6 servings.
