Tofu Salad

An eggless egg salad.

 

Ingredients

  • 450 g firm tofu
  • 1 large stalk celery, chopped
  • 50 mL finely chopped onion (optional)
  • 75 mL mayonnaise
  • 15 mL prepared mustard
  • Salt and pepper to taste

 

Instructions

In a large bowl, mash the tofu with a fork. It will be crumbly. Add the celery, onion, mayonnaise, mustard, salt and pepper. Serve the spread on bread or in a pita pocket.
